Individual companies and contacts should be able to be marked "Private" for access only by record owner. This is a legal requirement under Data Protection.

You have not understood the point. It must be possible to set an individual sending or received email to be "PRIVATE" so that only the sender or recipient can see it. If this is not possible then Salesmate (or the company using it) is likely to run contrary to GDPR regulations as well as breaching confidentiality between sender and recipient. This is not about a default setting for all emails, or about sequences.
