Change Deal Records to Read-Only After In a Certain Pipeline and/or Stage

We need the ability to maintain data integrity of our closed out deals by making them read-only for archive purposes after they reach a certain pipeline and/or pipeline stage as we've defined them. Currently these records are editable within any stage which is problematic for maintaining data integrity.
